These rustic granola recipe with coconut, dried cranberries, and apricots is one of my favorite granola recipes. With a big glass of cold milk, it is the perfect fall, Christmas, and winter treat.
1cupdried fruitI use ¼ cup each blueberries, cherries, golden raisins and apricots
Instructions
Preheat the oven to 350 degrees.
In a large saucepan, melt coconut oil on low heat.
Turn off the heat and stir in the honey and salt.
Add the chopped nuts, coconut chips and oatmeal. Mix well so the dry ingredients are evenly coated in oil.
Spread the mixture in an even layer in a 9” by 13” glass pan or a parchment paper-lined baking sheet.
Bake for 30 minutes, stirring halfway through.

I usually double the quantities given to make this last even longer for our family!
To get a crispy granola that mirrors that store-bought granola crunch, you want to make sure you add the right ratio of oil. Keep this in mind if you half or double the recipe.
You can change up the flavor of this oatmeal based on the season. Add in some pumpkin spice or apple pie seasoning for fall, cinnamon and vanilla extract for winter, or even cocoa powder for a chocolate treat.
Don't leave out the salt. The addition of good quality sea salt helps bring out all the flavors and sweetness of the granola.
