Ingredients

  • 2 tablespoons olive oil
  • 2 pork steaks
  • 1⁄4 teaspoon salt
  • 1⁄4 teaspoon pepper
  • 2 tablespoons butter
  • 1 onion, diced
  • 2 tablespoons einkorn flour
  • 3 garlic cloves, minced
  • 1 cup chicken stock
  • 1 teaspoon Worcestershire sauce
  • 1⁄4 cup heavy cream
  • Parsley-2 tablespoon fresh or 1 teaspoon dried

Instructions

    1. Heat the oil in a large cast iron skillet over medium/high heat.
    2. Sprinkle both sides of the pork steaks with half of the salt and pepper.
    3. Cook pork steaks for about 3-4 minutes on each side until browned and cooked through.
    4. Once browned on each side, set aside.
    5. To the hot skillet, add in the butter, onion, and the remaining salt and pepper. Sauté for about five minutes or until the onions start to become translucent.
    6. Stir in the flour until all of the butter is soaked up. Cook for another minute.
    7. Add in the chicken stock, garlic, Worcestershire sauce, and cream. Simmer for 2-3 minutes.
    8. Add the pork steaks back into the skillet and simmer for another five minutes or until the internal temperature reaches 145 degrees.
    9. Allow steaks to cook for a few minutes before slicing.

Notes

If you do not have einkorn flour, it can be substituted for regular flour.

Allow the steaks to cool for a few minutes before slicing in order to help keep all those yummy juice in.
