A lovely twist on a classic breakfast dish, this strawberry stuffed french toast is the perfect breakfast for any special occasion. Thick slices of soft bread are layered with a delicious strawberry cream cheese filling, dipped in a rich custard, and fried in butter. Top with your favorite toppings: whipped cream, maple syrup, strawberry syrup for a few ideas.

It is strawberry season here in Missouri. And my favorite way to celebrate is this strawberry stuffed french toast recipe. Slices of sourdough brioche (or whatever your favorite bread is) is smothered with a strawberry sweet cream cheese filling, dunked in a custard filling and fried to perfection. 

This easy recipe is perfect for Mother’s Day, a springtime brunch, or any old weekend. It is seriously amazing, probably the best french toast I’ve ever eaten and we make a lot of french toast around here.

There is just something about cream and strawberries that goes together so well and almost tastes like a strawberry cheesecake. Yum!

As you may know, I like to get on kicks. I will create a new recipe and make that over and over again until we are sick of it. This is currently one of them. Along with sourdough fried chicken (random yes, but the kids just can’t get enough). 

But if you’ve ever eaten a plump red strawberry fresh from the garden, you can understand why. Now we don’t grow enough strawberries on our farm to satisfy 7 little mouths, but I’m more than happy to support local farmers.

Could we ever grow enough strawberries for them? That seems like an impossible task. Kids in a strawberry field are like bottomless pits that can not be satisfied.

Tips:

  • To add a little lemon twist to this recipe, add some lemon zest and a little lemon juice to the cream cheese mixture.
  • To avoid soggy french toast make sure to follow the recipe. Adding too much milk to the egg and milk mixture will leave you with soggy bread.
  • Fry the french toast in butter. It adds a delicious rich flavor that you just cannot get from oil. 
  • This doesn’t have to be done with just strawberries, swap them out for fresh raspberries, blackberries, or blueberries.

Cream Cheese Mixture:

Cream cheese or mascarpone cheese. I like to use my homemade greek yogurt cream cheese since we currently are drowning in milk from our cow.

Honey or maple syrup

Fresh strawberries – The riper the better.

Egg Mixture

Eggs

Whole milk – Don’t skimp on low fat milk. The texture and flavor just will not be the same.

Vanilla extract – Homemade or store-bought.

Cinnamon

Salt

Bread:

Pick your favorite type of bread: Brioche bread, challah or French bread work great. You could also use Texas toast. My favorite is my sourdough brioche since it is so rich and decadent.

Butter for frying

Toppings (Optional)

  • Powdered sugar
  • Butter
  • Whipped cream
  • Sliced strawberries
  • Fresh berries
  • Maple syrup
  • Chocolate chips
  • Strawberry syrup. Cook down some strawberries with a little bit of sugar or maple syrup.

Tools you may need:

Medium bowl

Cutting board

Knife

Large nonstick skillet – I like using cast iron skillet or a ceramic coated pan for a healthy nonstick option.

Spatula

Hand mixer (optional: not really necessary, but it would make mixing the cream cheese much easier.)

How To Make Strawberry Stuffed French Toast

An hour or so before starting the recipe. Take out the cream cheese and allow it to sit at room temperature to soften.

Add the softened cream cheese and honey to a medium bowl, and stir until combined.

Fold in chopped sweet strawberries into the sweetened cream cheese.

Divide and spread the strawberry cream cheese filling onto 6 slices of bread.

Add the remaining 6 slices of bread to make 6 sandwiches. Another option is to create a pocket in thick sliced pieces of bread and stuffing the creamy strawberry filling into the pocket.

For the egg mixture, combine the eggs, milk, vanilla, cinnamon and salt in a large bowl and whisk well to combine.

Dip the cream cheese sandwiches into the egg mixture, and allow to sit for 5 seconds on each side to absorb. If the slices of bread are left too long it can make the french toast soggy.

Heat the butter over medium heat on a skillet or griddle.

Place the cream stuffed french toast on the hot skillet.

Cook for 2-3 minutes on each side, until golden brown and cooked through.

Serve warm. Our favorite toppings are whipped cream, strawberries and maple syrup!

FAQ:

What makes French toast soggy?

There are two main culprits for soggy french toast. First, the ratio of eggs to milk is off. Too much milk will lend to soggy bread. Second, soaking the bread too long and not cooking it all the way through. Five to twenty seconds is all you need to soak the slice of bread in the custard mixture.

Should you soak bread for French toast?

Yes. Soaking the bread for a few seconds allows the french toast to absorb the custard and give the recipe that moist and tender texture.

Why do you put milk in French toast?

French toast needs a liquid to soften the bread. Using whole milk (and eggs) will give it a rich custard flavor. Don’t skimp on the ingredients and substitute skim milk for the whole milk. The texture will just not be the same.

Ingredients 

Strawberry Cream Cheese Filling:

  • 8 ounces cream cheese, softened
  • 2 tablespoons honey
  • 1/2 cup diced strawberries, plus more for serving

    Can you make French toast on ahead and freeze it? I am thinking about a cabin breakfast, but to make at the cabin can take time when feeding a crowd. Thanks

      Hmmm I’m not sure. I would think with the cream cheese it wouldn’t freeze well. You could make the bread ahead of time and keep that in the freezer, and maybe make the cream cheese filling a day or two in advance. Then it will be a lot faster to slice and cook.
