How to Make Sourdough Pizza Dough

Step 1: The morning of pizza night, add the ingredients to a stand mixer bowl, using a kitchen scale if you choose to weigh the ingredients.

Step 2: With a dough hook attachment, mix the dough on medium speed until the dough passes the windowpane test, which might take up to 10 minutes.

Step 3: Place in an oiled bowl and cover with a lid, plastic wrap or a plastic bag. Rest at room temperature for about 8 hours or until the dough has doubled in size.

Step 4: Preheat oven to 475. Divide dough into 4 equal portions and allow to rest while you prepare your toppings.

Step 5: Roll out on a lightly floured work surface with a rolling pin. I like to create a bit of a ridge around the outside for hand stretched thickness.

Step 7: Bake for 13-15 minutes. (I like to use a preheated pizza stone or cast iron skillet but you can also use a pizza pan). Finish off with a 3 minute broil to achieve the browning on top of the crust.

  • Be careful not to over-ferment the dough. This will leave you with a sloppy mess. 
  • This dough can be made days or even weeks in advance. If you are planning to use it within a few days, place in the fridge in an airtight container until ready to use. You can also freeze for later.

    Simple and easy!

    As for step one, where it says to add the ingredients to a stand mixer bowl. One of the ingredients listed is 2 tablespoons of oil.

    Yet in step 3, it starts with “Place in an oiled bowl”

    Is that in addition to the oil from step 1? Or is the oil not supposed to be added to the dough?

    If you are doubling this recipe note that the grams do not double or triple based on the recipe. You have to do the math to weigh it on your own.

    I was hoping to love this recipe, but the flavor of the crust fell short for us. Iโ€™m sure that a huge contributing factor was that I didnโ€™t have a stand mixer so I kneaded by hand. I did 6 rounds of stretch and folds every 15/30 minutes as recommended if mixing by hand, and it still didnโ€™t develop enough gluten to pass the windowpane test so it took far too long of hands on kneading. If you donโ€™t have a stand mixer, Iโ€™d recommend finding a different recipe or researching the best way to hand knead pizza dough.

    Wondering how large of pizzas this makes? Iโ€™m hoping to make personal pizzas in my Ooni for 6 people. Should I 1.5 the recipe? 1 cup of flour per pizza feels like a lot though.

      This recipe makes four large pizzas. If you have six people, I think you could just cut the dough into 6 smaller balls to make them personal. It would produce 6 medium sized pizzas.
