Today, I’m continuing our egg series where I teach you how to make some serious delicious eggs 4 different ways. Last week we talked about over hard eggs and today I want to show you how to make fried over medium eggs.

This is a super yummy way to enjoy eggs and one of my favorites. My kids don’t appreciate dipping toast into sunny side up ones, but give them a fried egg with a slightly soft yolk and they are all about it.

We love putting them on homemade biscuits with some cheese to make breakfast sandwiches. Perfect for an on the go breakfast when we have somewhere to be in the morning.

Even though our chickens have all but given up on laying for the winter, soon enough we will have more eggs than we know what to do with and will need to change up how I am serving them to mix it up.

What is an over medium egg?

It is an egg that has the white cooked all the way through and a yolk that is partially cooked, slightly jammy in texture and runs just a little bit. 

It has been cooked slightly less than over hard eggs, but more than over easy eggs.

Tips:

  • Only cook 1-2 eggs at a time to avoid over crowding the pan.
  • Heat over low heat. Cooking too high will overcook or potentially burn the eggs without cooking the yolk enough.
  • Choose a non-stick pan for cooking so the eggs don’t stick. I like using a cast iron skillet or a ceramic coated pan for a healthy non-stick option.

What’s the difference between over easy and over medium eggs?

Over easy eggs have a yolk that is very runny, whereas in over medium eggs the yolk is slightly more cooked and has a more jammy consistency.

How long does it take to make over medium eggs?

About 3 minutes of cooking time and a total of 5-7 minutes with prep time included.

Are over medium eggs fully cooked?

Yes. Since the center is mostly set they are considered fully cooked.

How can you tell when over medium eggs are done?

This is a little challenging to tell because you don’t want to break the yolk to tell. The best way to tell is by gently pressing your finger over the yolk after flipping. If it is really squishy then it is not cooked enough, it is slightly firm to the touch it is good.

Ingredients you will need:

Eggs: The fresher the better. To make the best dish, it is best to use high quality pastured eggs. Regular, store-bought eggs also work. I like using pastured eggs not only because we have a lot of them, but they are more nutritious, containing more omega 3, beta carotene, vitamin E and A.

Fat: Butter is preferred because of the delicious flavor it adds, but they also do well in lard. A neutral oil works also, but not as delicious as animal fat. If choosing an oil use avocado, coconut, or olive oil as these are the healthiest cooking oil. Avoid using refined oils like vegetable, soy, canola or corn.

Salt and pepper: Salty eggs are the best type of eggs if you ask me. Salt and pepper add lots of yummy flavor, and you can also add your favorite fresh or dried herbs, if desired.

Tools:

Cast iron skillet or another type of non-stick skillet.

Spatula: A thinner spatula that makes flipping is best.

How To Make Over Medium Eggs

Heat a skillet to low heat.

Add about 1/2 tablespoon of butter and allow to melt.

Crack the egg into a preheated cast iron skillet.

Cook until the white is almost cooked through. About 2-3 minutes

Flip the egg and cook for about another minute. The yolk should almost be cooked through, but still be a little runny and gel like.

Top with salt and pepper.

Add herbs like parsley or thyme (optional).

    I add another step. After I put the egg in the pan I add a little bit of water to the side and cover so the steam can help the cooking.
