This rustic homemade granola recipe with coconut, dried cranberries, and apricots is one of my favorite food item to always have on hand. Mix it in yogurt for a delicious snack or quick breakfast.

Making your own granola at home is easy and versatile

While I love to add in all the mix ins – dried fruit, nuts, coconut – you can also use this step-by-step to make plain granola, too. 

We like to enjoy this granola with raw milk yogurt in a yogurt parfait or even in a smoothie bowl, preferably a kefir smoothie

  • Quick and easy to make ahead – I usually make this granola when the kids are at church doing their Wednesday night activities. This granola recipe is super quick to whip up. I double the recipe so I have it on hand to serve during the week.
  • Make it your own – The best part about any granola recipe is that you can add your favorite mix-ins. Sunflower seeds, flax seeds, chia seeds, peanut butter, dried fruits, nuts, mini chocolate chips can all make this granola even tastier.

Honey  – Preferably local honey. We were able to find some at the farmer’s market. You can also use real maple syrup if you prefer. I like to use a liquid sweetener because it helps the granola clump together more. 

Chopped Nuts –  I like to use pecans and walnuts for this recipe. Not only do they add that nutty flavor, but it also adds a crunch. Any nut you like would work. Macadamia nuts, almonds, pumpkin seeds, etc. would all be good! I use my food processor to chop them up. 

Coconut Chips – This adds another boost of flavor to the granola and gives it another layer of texture. You could also use shredded unsweetened coconut.

Oats – I used organic rolled oats, not the quick oats. 

Dried Fruit – I use ¼ cup each blueberries, cherries, golden raisins, and apricots Make sure your dried fruit does not have any added sugar.

How To Make Homemade Granola

Step 1: Preheat the oven to 350 F degrees.

Add oats, chopped nuts (or whole if you prefer), coconut chips, honey, salt, and melted coconut oil to a large bowl.

Step 2: Mix everything so that all the dry ingredients are evenly coated with the melted coconut oil.

Step 3: Spread the oat mixture in an even layer in a 9” by 13” glass pan. You could also use a baking sheet. Line with parchment paper for easier clean up.

Step 4: Bake for 30 minutes, stirring halfway through. The oatmeal should be a beautiful golden brown.

Add in the dried fruit while the granola is still warm.

Tips

  • To get a crispy granola that mirrors that store-bought granola crunch, you want to make sure you add the right ratio of oil. Keep this in mind if you half or double the recipe. 
  • You can change up the flavor of this oatmeal based on the season. Add in some pumpkin spice or apple pie seasoning for fall, cinnamon and vanilla extract for winter, or even cocoa powder for a chocolate treat. 
  • Don’t leave out the salt. The addition of good quality sea salt helps bring out all the flavors and sweetness of the granola.

Is eating homemade granola healthy?

This homemade granola uses all whole ingredients that include vitamins and minerals. You also get the benefit of healthy fats with the coconut oil and nuts. As with anything that includes sugar, though, it’s important to eat granola in moderation.

What ingredient makes granola stick together?

Fats and liquid are the most common binding agents for granola. In this recipe, the coconut oil and honey help it clump together. The oil also makes it nice and crispy! If you want more clumpy granola, you can also add egg whites. 

How do I store homemade granola?

I like to store my homemade rustic granola recipe in a glass container on the counter. Any airtight container will do. This granola is good for up to two weeks, but if your family is anything like mine it will be gone within one week!

Ingredients 

  • 3 cups chopped nuts, I use walnuts and pecans
  • 8 ounces coconut chips
  • 2 cups oatmeal
  • 1/2 cup honey
  • 3/4 cup coconut oil, melted
  • 1/4 teaspoon salt
  • 1 cup dried fruit, I use ¼ cup each blueberries, cherries, golden raisins and apricots

  • Turn off the heat and stir in the honey and salt.
  • Add the chopped nuts, coconut chips and oatmeal. Mix well so the dry ingredients are evenly coated in oil.
  • Spread the mixture in an even layer in a 9” by 13” glass pan or a parchment paper-lined baking sheet.
  • Bake for 30 minutes, stirring halfway through.

Notes

  • I usually double the quantities given to make this last even longer for our family!

    I added the fruit, because I didn’t see any instructions on when, prior to baking. I’m seeing now that was a mistake.

    I read in comments that there’s a step 7 that says to add fruit after it bakes, but it doesn’t show up for me. I’m not sure if it’s my end or website hiccup.

    Delicious!! I used only walnuts from our own tree, and just a few pieces of dried apricots and no other dried fruit since my husband doesn’t care for it in his cereal and I just sprinkle some on top for the kids and I. I used quick oats but will probably use rolled oats next time, as I think the texture would be even better. I’m so glad that I found a healthy granola that my husband likes and actually turned down fruit loops for! Thank you Lisa!

    I just watched your Rustic Granola video above. Shouldn’t we ferment all nuts (8-24 hours) and then bake them at 300* (for ?) to dry them before adding nuts to this recipe, please?

      I just read your question above. In Lisa’s Rustic Granola Instructions listed above she says, Step 7: “Add in the dried fruit while the granola is still warm.” So, you add the fruit after baking.

    Very easy and yummy! We like chocolate granola so I add 1/4 cup cocoa powder to the honey and oil and after it baked I added maybe a 1/4 cup chocolate chips stirred in. The choc chips get melty and swirl in to add a sweet little surprise 🤤this recipe is also good as a cereal with milk 💜
