I’ve been obsessed with using lavender lately ever since a visit to a local lavender farm.

I have found it to be so versatile in its use. Two of my favorite creations so far are my homemade lavender ice cream and this easy honey lavender latte recipe. 

Each afternoon, I really enjoy having a cup of coffee as a midday treat. I knew at the first sip that this honey lavender latte would be on repeat this summer.

Espresso  โ€“ I have an espresso machine I love. If you can’t make espresso at home, you can also just use very strong coffee brewed in a coffee pot or whatever your favorite brewing method may be. 

Whole milk โ€“  We prefer to use raw milk. You can also use a non-dairy milk such as almond, coconut, or oat milk. 

Homemade lavender syrup โ€“  Easily make your own simple syrup at home with just honey, water, and food grade lavender. If you are not a huge lavender lover, you can adjust the amount of syrup you use in the recipe to your taste.

How to Make a Lavender Latte

Step 1: Create a lavender syrup by combining 1/2 cup water, 1 cup honey, and 1/4 cup culinary grade lavender in a small saucepan. Bring to a gentle simmer, turn off the heat, and allow the lavender to steep for 15 minutes.

Step 2: While the lavender is steeping, brew your espresso or strong coffee.

Once ready, pour the syrup through a fine mesh strainer to remove the lavender. Find more details on the lavender syrup recipe here.

Step 3: Stir the hot espresso and honey lavender simple syrup until combined in a pint sized glass (16 ounces).

Step 4: Pour milk on top of the espresso and syrup mixture. Add enough ice so the milk is a few inches from the top of the glass. If you prefer a hot latte, use a milk frother to warm and froth the milk before adding in and skip the ice. Gently stir and enjoy!

Tips

  • Prefer a hot drink? Turn this into a hot lavender honey latte by using a milk frother to heat and froth the milk before adding your espresso and simple syrup mixture. 
  • Don’t have an espresso machine? No problem! There are other at-home methods you can use, such as using a French press. Check out some ideas on making espresso without a machine here. Of course, you can also just use strong coffee brewed however you prefer. 
  • Play around with flavor. Every coffee bean is going to have an unique flavor. Experiment with various types of roasts and flavors to see what you like paired best with lavender. You can also include add-ins, such as mint or vanilla extract.

Ingredients 

  • 4 tablespoons espresso (double shot) or very strong coffee, 2 ounces
  • 1 cup whole milk, 8 ounces
  • 1 tablespoon lavender honey simple syrup

Instructions 

  • Create a lavender syrup by combining 1/2 cup water, 1 cup honey, and 1/4 cup culinary grade lavender in a small saucepan. Bring to a gentle simmer, turn off the heat, and allow the lavender to steep for 15 minutes.

  • Pour the lavender syrup liquid through a fine mesh strainer to remove the lavender.

    Food grade lavender? Can I use lavender from my own garden?

      Yes, you can! I would be weary of using it if you have sprayed any chemical fertilizer or pesticides on your lavender though.

    Hi.Lisa! Just getting into the essential oil โ€œthingโ€. Iโ€™ve always liked doing natural and healthy stuff. Was diagnosed with Celiac/gluten several years ago, probably had it a lot longer (misdiagnosed๐Ÿ˜ฌ), so; really watch what I eat. Daughter has had worst symptoms than I (sheโ€™s dairy intolerant severely), but she never been officially diagnosed.     Hi Lisa,
    I wanted to make this for a few friends coming over for dinner. However, I just saw that you have to let the coffee steep for 12 hours so I guess I will have to try this another time. Iโ€™m new to using a French press. Will it still taste good if I let it steep for a shorter amount of time? Would 5 min. be way too short? Thank you,

      Hi Lisa! Yes you could steep for a shorter time it will just be weaker coffee. I would suggest using a bolder strong coffee if doing so.

    I found you over on the youtube land, and have fallen in love with your style. I am a homeschooling mom of 4 small children, ages 8 years-5 months, and live a similar lifestyle here in Illinois. I get the impression that you may live close by and I am in search of a good raw milk source. I have gotten some from 3 different farms, and for different reasons, I am not currently using them.
