Why You’ll Love This Hamburger Helper Recipe
Healthier childhood favorite – Hamburger helper is one of many childhood favorites, and this healthier version makes it easier to enjoy guilt free. I love knowing exactly what ingredients are going into my food, which is why I prefer homemade over the boxed stuff!
Easy – This homemade version of hamburger helper is a delectable cheesy pasta, simple to make with real simple ingredients, and ready in under an hour.
Family dinner – Picky eaters will love this meal! I enjoy having crowd pleasing, easy meals like this in my back pocket as a busy mom.
Ingredients
Pasta – I love using Jovial einkorn pasta. ‘If you can’t ferment it, einkorn it’ is my slogan. Einkorn flour is much easier to digest than regular flour.
Shredded cheese – I’ve tried this with multiple types of cheese. You could use fancier cheeses or stick to mozzarella or cheddar.
Milk – I prefer whole milk, as it adds a nice, smooth flavor. To make it even creamier, you can use heavy cream or half & half.
Eggs – It sounds odd, but adding eggs to this dish makes it so, so creamy and delicious.

You can use your favorite milk substitute, like almond or coconut, to make this recipe.
Yes! I usually double this recipe to accommodate my large family.
You can easily make this into a gluten free recipe by swapping out the pasta for gluten free pasta. I suggest using a lentil pasta, as it holds it’s shape well, and I think it has the best flavor.
Store leftovers in an airtight container for up to three days. You can freeze leftovers up to three months, defrosting in the fridge before reheating to serve.

Just delicious…I just got your cookbook ♥️
Okay I had to come back to comment… it was a meal EVERYONE loved, even my picky kiddos. So rare!! I’m so happy! Thank you, Lisa!
Love this! I’ve been wanting to try a homemade version, and this delivered!
This dinner is always a HUGE hit with my family. A favorite for sure
Hi Lisa,
I made this last night , as my husband had been asking for hamburger helper (the old box kind). I was happy to find a healthier version & he was happy to eat it! Tonight we had the sloppy joes, which were also a big hit. I served them with coleslaw, and it was a delicious meal.
I appreciate your blog, recipes and all! I have sourdough starter that came to IL from TN (along with your name & website info)and have made many things with the sourdough. I don’t really eat much bread, but we love sourdough pancakes, waffles, flatbread and I’m excited to try the Naan.
Thank you for all you do. You make it look easy and I know it’s not.
Kathy
Making this tonight I wonder if a can of diced tomatoes would make it weird 🤔
I just made this last night and was telling my husband I’d like to put veggies in it – broccoli, tomatoes, etc. He only wanted tomatoes. I say go for it & let us know how it is!
Looks amazing! Do you think I could make it without the eggs?
The eggs make it extra creamy, but you could go without, yes.
Holy smokes!! This was absolutely delicious! It saved me on a busy weeknight and came together quickly and easily. My family love it! Thank you 🙂 *I used cream and it did not disappoint!
Thank you for such a kind review!
This is a family favorite for all ages in our home. The first time I made it our 4 year old asked for a 3rd helping (he got small servings to ensure he would eat). This is a staple in our menu rotation. Make it for your family asap!
