Tips for Healthy Meals

  • Place meat in the fridge to defrost for the week, making sure that you have meat ready to use when you need it.ย
  • Keep side dishes simple. A side salad withย homemade dressingย orย crispy potatoesย paired with a simple dinner like roast chicken or salmon croquettes, can go a long way while still being healthy and easy.
  • Consider doubling a batch of dinner to give you healthy lunch options for the week, or save you a night of cooking. A little meal prep can make eating healthy meals for the entire family so much easier.ย

This has just reminded me of the best tip that has really helped me, and that’s to take all your freezer items out of the freezer for the whole week and use them in the order that they thaw. I have been doing this every Sunday evening since I heard you talk about it and it’s a total game changer! Not only do I have something defrosted ready and have a base ingredient right there to help my inspiration, it also helps to keep me accountable and motivated to cook something from scratch no matter how tired I am…because I cannot stand food waste! So now when I look in the fridge I breathe a sigh of relief because so much of the decision making is already done ๐Ÿ™‚ Thank you Lisa! From Cornwall, UK

    1. Lisa says:

Yes! It is such a game changer. Also, not trying to figure out how to use frozen meat and thaw it quickly.

I love this! I have struggled with meal planning for years. It is so relieving to know that I am not the only one, and that I donโ€™t โ€œhaveโ€ to plan meals. I can just relax and put meals together with what works for that day, which is pretty much what I have been doing all along. Can you tell me the recipe for the avocado dressing? It looks so good!

  3. Caitlin says:

I really enjoyed this post and video and do feel so very similar to you in that I feel stressed with the idea of planning out every meal and having a specific grocery list each week. I guess I didnโ€™t realize how okay that is until I found your videos ๐Ÿ™‚ Would love to see a summer edition of this sort of video!

I am one of those people that can open up the fridge and put a meal together. I am encouraged to know that others don’t meal plan and find economic/time management success. I eat a simple, healthier diet, have a fridge that does get emptied into a pot instead of the garbage. My coworkers always comment that my food smells good.

    1. Lisa says:

Yes! Couldn’t agree more. ๐Ÿ™‚ Just simple healthy meals. You don’t need a plan for that!

I love this! I would love to see a winter edition of lunches and breakfasts too.

    1. Lisa says:

Lunches are pretty much the exact same. Breakfasts are just eggs, kefir smoothies and sometimes sourdough pancakes. We are pretty boring! ๐Ÿ™‚

  6. Chelsey says:

Your bone broth recipe using the instant pot has been a favorite of mine this winter! When my co-workers smelled my soup during lunch today, they asked if I brought enough for everyone! ha.
