Einkorn brownies are decadent, fudgy, one-bowl brownies that are super simple and incredibly delicious. A few ingredients and a few minutes are all they require, making these a great choice for a simple, consistently delicious treat.

Brownies may be one of my favorite desserts. Top with some homemade ice cream, and Iโ€™m in heaven. Sometimes, you just need that one faithful recipe that you can make in a pinch to bring to a friend, or to bring to homeschool play group, or even for late night dessert after the kids go to bed.

I loveย sourdough brownies, but they do require planning and thinking ahead, which doesnโ€™t always happen and isn’t always possible. These einkorn brownies really couldnโ€™t be simpler, and they can easily be made last minute.

One bowl, ten minutes to mix up, and then allow them to bake while you clean up the kitchen. Not only will the kitchen be clean, but your house will have an amazing chocolate aroma wafting through the air.

Cooking has always been a passion of mine, but Iโ€™ve also come to truly appreciate baking. Itโ€™s the ease and simplicity of being able to pop something in the oven to bake, while continuing to multi-task other household duties, farm chores, or the needs of little ones.

Baking is rewarding and satisfying. It’s a beautiful opportunity to experience great satisfaction in your productivity, as well as another means of honing our own skills.

Baking comes with mistakes and disappointments sometimes. Fortunately, there are many people out there, myself included, who work hard to perfect a recipe so that you can try it at home and achieve a good outcome.

If you love brownies, you will most certainly love this recipe. Double chocolate, homemade brownies with a fudgy, moist texture. They are better than any box recipe, and I promise, this recipe isn’t much harder than popping open a box.

What is einkorn?

Einkorn is a type of wheat that has not been hybridized like most conventional wheat has been. It has a lower gluten content, making it easier to digest. Those that are gluten intolerant or just have some digestive issues may be able to tolerate einkorn just fine.ย

Unfortunately, those who have celiac will still need to steer clear.

What does einkorn taste like?

Einkorn has a very similar flavor to regular wheat, but offers an additional mild, nutty flavor.

Tips For Making Einkorn Brownies

  • Chocolate chunks are way better than chips. Yes, this may just be my opinion, and chips will work just fine, but there is just something extra decadent about the chocolate chunks.
  • Espresso is optional, but this addition to the brownie gives a richer chocolate flavor.
  • Donโ€™t skimp on the salt. Adding salt to baked goods helps brings out the flavor and will actually taste more sweet than if you omit it.
  • You cannot substitute regular flour for the einkorn flour. Well, you could, but more liquid may need to be added as einkorn doesnโ€™t absorb as much liquid as regular wheat.

I’ve looked everywhere on your site for the fermented style brownies that you have links for on other recipe pages, can this recipe be used?

    1. Lisa says:

This is the fermented sourdough brownies. These einkorn brownies are also delicious though and don’t need to be fermented.

  2. Kathy Black says:

I absolutely LOVE these brownies. I did something one is advised to never doโ€ฆ I made these for the very first time for my daughterโ€™s small family gathering for her gender reveal. I made this brownie recipe today in a brownie bite pan. Only change I made was to use 1tea. espresso powder instead of brewed espresso. I baked them for about 12-13 minutes. They were perfect and delicious! Thanks for a great recipe Lisa!

  4. Payton says:

Another winner! I have tried maybe around 10 of Lisaโ€™s recipes and have been pleased with almost all of them. What I really appreciate about her recipes is their no fuss simplicity and wholesome ingredients. As a mom of 3 under 5, the simpler the better. Thanks for creating a lovely website!

  5. Wendy says:

SO I made these brownies today! I followed the recipe exactly and added a cup of homemade marshmallows and rough chopped salted pecans with the semi sweet chocolate chips! Waiting to cool! So Rocky Road brownies will be on their way to the grandkiddos tomorrow.

I used alternative sweeteners and baked 25 minutes. These brownies were amazingly chocolaty and delicious!! This will be my go to and comforts my brain knowing thereโ€™s good flour in them. My desire for delicious, healthy and easy brownies are finally fulfilled. Thank you!!

    1. Cheyenne says:

May I ask what alternative sugars you used?

  7. Heather Rogers says:

Hi Lisa! I am experimenting with freshly milled Einkorn flour. I do not want to make it all-purpose. Would you change anything in this brownie recipe because I am not using all- purpose?

    Blessings,
    Heather

    1. Kathy A says:

I would like to know this as well! I have a mill but having a time finding info on how to use it in recipes.

    2. Anonymous says:

I use the same amount of freshly milled einkorn and they turn out great!

  8. Chessa Budai says:

Mine turned out really chunky in texture. Did I overwork the flour blending it in or was the butter too warm maybe? I mean they still taste great!

  9. Cindy says:

Where can I buy einkorn flour?

    1. Jenn says:

Jovial has einkorn flour that’s also organic! ๐Ÿ™‚

Can you leave out the choc chunks/chips all together?

    1. Lisa says:

      Yes, you sure can!
