While there is nothing like a burger fresh off the grill, especially when it is wedged between a sourdough hamburger bun, some days you need something that will come together quickly and can easily be made ahead. 

With this soup, you’ll still get all of the flavor of a good cheeseburger, but with additional veggies and nutrient-packed bone broth

I prefer to use my homemade instant pot bone broth for the base, but store-bought chicken stock also works if you are in a pinch.

Cheeseburger Soup Ingredients

Potatoes: For broth based soups, I love to use a red or gold potato. Whatever potato you have on hand will work, though. 

Chicken Broth: For a really nutrient-dense broth, try making my chicken feet bone broth for this. You can also use beef broth if you prefer. 

Ground Beef: I typically use grass-fed, lean ground beef. You could also sub ground turkey or chicken for a leaner meat option. 

Shredded Cheese: A classic sharp cheddar cheese is our family’s pick, but you could also use pepper jack, American cheese, or whatever you typically enjoy on your burger.

Using a Slow Cooker

For busy days, you can absolutely make this into a crock pot cheeseburger soup. 

To the slow cooker, add all the ingredients (except the cheese and ground beef). Place on low for 6-8 hours or high for 3-4 hours.

About 30 minutes before serving, brown the ground beef in a skillet. Breaking it up into bite size pieces. Drain extra fat if needed.

Add the ground beef to the soup in the slow cooker. 

Stir in cheese. Allow it to melt and then serve with your favorite toppings.

How To Make Cheeseburger Soup

Step 1: In a large pot or Dutch oven over medium heat, add a little olive oil, butter, or coconut oil. 

Add onions and celery. Sauté until soft.

Add in garlic and cook for just a minute or two, being careful not to burn.

Step 2: Add in carrots and potatoes. Strain broth into the pot if using homemade, or just add in store-bought broth. 

Allow it to simmer for about 20 minutes until the potatoes and carrots are soft.

Step 3: Brown ground beef over medium heat, breaking it up into bite sized pieces, for a couple of minutes in a large skillet until cooked, and add to the pot.

Step 4: Sprinkle in dried or fresh parsley to the simmering soup. Add salt and pepper to taste.

Shred cheese and add to the pot. Stir together.

Add your favorite toppings. We love sourdough croutons or even some homemade lacto-fermented pickles

Tips

  • Make less dishes by reusing your pots. I like to go straight from making a whole chicken in the Instant Pot, to making bone broth, and then straight to making soup.
  • Brown the ground beef before adding it to the pot for a much more delicious and flavorful meal.
  • Add some frozen peas or green beans to the hot soup to help cool it down enough while also cooking the veggies before serving.
  • Add your favorite cheeseburger toppings to the soup. We like extra shredded cheese, crispy bacon, diced tomato, diced onion, green onions, pickles, avocado, and a dollop of homemade raw milk sour cream to make this soup extra thick and creamy. You could even add a drizzle of hot sauce if you prefer to add a little spice.

Can you freeze cheeseburger soup?

Potatoes don’t freeze well, so I wouldn’t recommend this as a freezer meal. Store in the fridge for 3-4 days in an airtight container. Reheat on the stove for best results. 

What is a good side for cheeseburger soup?

Around here we love to have a toasted slice of sourdough crusty bread. It’s also delicious with sourdough breadsticks or sourdough garlic breadIf you want to pair it with a classic, make homemade French fries. 

Is cheeseburger soup healthy?

This recipe is very healthy, since it is packed with veggies, meat, and cheese. To make this meal healthier, try to get pastured meats whenever possible, use homemade bone broth, and organic vegetables.

Which potatoes are best for soup?

it all depends on the type of soup you are making. I like russet potatoes for things like my hearty and healthy potato soup recipe because they absorb a lot of liquid and make a richer creamy soup. For cheeseburger soup, red potatoes are a great option because they hold their shape in broth based soups.

    This recipe sounds great, and a keeper.I have all sorts of things running through my head to make it my own. Sourdough croutons tossed with pickle juice and oil,seasoned with tomato,onion and cheddar powde.
    Halved roasted cherry tomatoes and charred diced Romain lettuce.
