How to Make Crepe Filling

Step 1: To make the filling, mix together room temperature cream cheese with maple syrup in a medium bowl.

Add vanilla and mix until smooth.

Step 2: With a stand mixer or electric hand mixer, whip heavy cream until stiff peaks form.

Step 3: Fold the cream in with the cream cheese mixture using a rubber spatula and use immediately.

Step 4: Create a triangle shape by placing the crepe flat, add your filling to one half of the crepe and fold in half. Fold your now half circle in half again to achieve the triangle shape.

  • When whipping the heavy cream, start at a low speed and work your way up in speed to avoid messes.

Yes, you can freeze crepes with filling, but I wouldn’t recommend it. Crepes are best fresh with the fillings added. You can try to freeze the crepes flat and plain between pieces of parchment paper. Defrost carefully, as crepes are very delicate, reheat, and add toppings.

How do you fill and roll a crepe?

Lay your crepe flat and take a spoonful of the whipped cream cheese filling. Place it in the center and spread it around into a thick layer or thin layer, whatever you prefer, leaving some space along the edges bare. Take the edge and roll up the crepe from one side to the other, similar to how you would roll up a burrito. For a classic crepes look, fold it into a triangle by placing the crepe flat, add your filling to one half of the crepe and fold in half. Fold your now half circle in half again to achieve the triangle shape.
