Mornings are typically very busy around these parts. Getting 7 kids ready, farm chores done, and making breakfast all before our homeschool day school starts is a feat. This easy recipe is perfect to get breakfast on the table fast.
There probably isnโt anything faster than fried over-easy eggs.
They literally take just minutes to make and when you have a lot of mouths to feed, it’s a really nice fast breakfast making it a favorite way of mine.
I get four skillets going so I can cook as many as possible at one time without having to wait long. Standing over the oven flipping eggs, or pancakes for that matter, is not myย favorite thing.
Served with some sourdough bread, everyone loves dipping their piece of bread in the runny yolk.

What is an over-easy egg?
Over easy eggs are eggs that have been cooked slightly on each side until the whites are set and the yolk is runny.

Healthy: Eggs are one of the most nutrient dense foods.ย Packed with so many nutrients… I mean they could create a baby chicken if fertilized. Pretty impressive if you ask me.

Tips :
- Only cook 1-2 eggs at a time to avoid over crowding the pan.
- Heat over medium low heat. Cooking too high may overcook or potentially burn the whites.
- Choose the right pan. A non-stick frying pan for cooking so the eggs donโt stick. I like using a cast iron skillet or a ceramic coated pan for a healthy non-stick option.
- Use fresh eggs. Older ones tend to spread apart more and not hold their shape as well.

Are eggs over-easy healthy?
Yes. They are full of protein, vitamins and minerals.
Ingredients:
Eggs:ย It is best to use high quality pastured eggs. Store-bought also works. I like using pastured eggs because they are more nutritious, containing more omega 3, beta carotene, vitamin E and A. We also have around 30 chickens too which comes in handy. We always have fresh chicken eggs around. Duck will also work.
Fat:ย Unsalted butter is preferred because it adds a really delicious flavor. A neutral oil or fat like lard, avocado, coconut, olive oil, or even bacon grease are good choices. Avoid unhealthy refined oils like vegetable, soy, canola and/or corn.
Salt and pepper:ย This adds so much flavor and really brings out the flavor in eggs.ย I like kosher salt or sea salt. Top with other herbs or garlic powder for extra flavor.
Tools you may need:
Cast iron pan or another type of non-stick skillet. A stainless steel pan will also work. The trick to make stainless steel a nonstick pan is to preheat the pan before adding butter or oil.
Spatula: A thinner spatula that makes flipping is best.
How To Make The Perfect Over-Easy Eggs:
Heat a non-stick pan over medium-low heat.
Melt butter in the skillet.
Add raw eggs carefully one at a time to the melted butter. You may want to crack them into a separate dish so the egg cooks more evenly and stays together better.
Cook for about 1-2 minutes. The egg whites should be set.
Flip and cook the second side for another 30 seconds for best results. They should have a runny egg yolk and set whites.
Sprinkle with a dash of salt and pepper and any other of your favorite seasonings.
Serve.
Storage:
Store in an airtight container in the refrigerator for up to two days.
What To Serve With Over Easy Eggs:
Breakfast sandwich with sourdough biscuits
With crispy potatoes
On top of a breakfast pizza. Cook eggs separately and add to the top of the pizza if you want to keep them over easy.
With thick slices of sourdough bread or sourdough potato bread toasted and slathered with a lot of butter.
On top of a salad.
Over avocado toast.

- Heat a non-stick pan over medium-low heat.

I noticed that you keep the eggs in a wire basket on the counter and NOT in the frig.
#1: My SIL gives us eggs… should i be doing the same aka no frig?

IF they have been washed, then they MUST be refrigerated. Washing them removes the protective bloom that lets them stay out with out refrigerating them. If the eggs haven’t been washed, they can sit out on the counter for several weeks.
Farm eggs are harder to peel in my opinion. Sometimes just going from the hot water to ice cold water helps. I crack them slightly and then peel carefully.
