One of the best parts of gardening is walking out to the garden in the late afternoon with a basket in hand to see what is ready to be picked for dinner. Itโ€™s a peaceful moment of quiet when all you hear is the buzzing of bees, the sweet chirping of birds, and children giggling off in the distance.

I feel so grateful and excited for the produce that will make our plates that evening, enjoying and embracing the seasonal varieties of the garden. 

The garden is currently bursting with a variety of greens, always one of the most prolific spring vegetables.

At some point, you have to figure out how you can eat as many of them as possible…being intentional to avoid waste when the garden’s momentum is surging past my family’s ability to consume. What a lovely problem to have!  

Salads are always welcome. They offer versatility and excellent nutrition, so we toss them together quite often. Pair the garden fresh lettuce with homemade sourdough croutons, though, and I’m saying it’s time to open up shop.

There is literally no where else to find a salad that fresh, delicious, and wholesome with these spectacularly crunchy, satisfying and flavorful croutons.

Crunchy, salty, tangy sourdough croutons mixed with delicate leaves, creamy cheese and rich avocado topped with homemade ranch dressing (or honey mustard) will easily be the highlight of your day.

It’s a to-die-for lunch and a guest-worthy dinner side, all while being healthy and simple.

Tips For Making Sourdough Croutons

  • You can substitute homemade sourdough bread with a good quality sourdough bread from the store if you are pinched for time. Homemade bread has more flavor since it is typically fermented longer in the traditional way. This not only boosts that tangy sourdough flavor, but also has more health benefits.
  • For this recipe, I love the flavor olive oil adds. You could also substitute it with avocado oil. I wouldnโ€™t recommend any other highly processed oil like vegetable, corn, or canola, etc. These oils are very unhealthy and donโ€™t add any flavor to the croutons.

Grain mill and stand mixer (for making homemade bread)

Ingredients:

  • Sourdough Bread: preferably homemade. This is my favorite recipe. If you want to make einkorn croutons, use this sourdough einkorn bread.
  • Olive oil: I like the flavor of extra virgin olive oil.
  • Herbs de Provence or Italian seasoning: Herbs de Provence is typically made from a combination of rosemary, savory, thyme, marjoram, and oregano. Sometimes other herbs like lavender, tarragon, and fennel are also included. It may be more challenging to find, so Italian season also works wonderfully.
  • Salt: My favorite is an unrefined sea salt.

How To Make Homemade Sourdough Croutons

The day before, prepare my favorite no-knead sourdough bread recipe. This also works with day or two old bread. If you are pinched for time, you could always use a store-bought sourdough bread.

Preheat oven to 350 degrees. Line a baking sheet with parchment paper. This makes clean up super easy.

Cut bread into 3/4 inch cubes and place into a large bowl.

Drizzle with olive oil and sprinkle with salt and spices. 

Toss well to combine all the ingredients and evenly coat the bread cubes with oil. I find this works best with my hands. It’s a little messy, but it is the most efficient way to mix everything.

Spread evenly on the parchment lined baking sheet.

Bake for 15-20 minutes. The edges should start to turn a little golden.

Allow to cool completely and then enjoy.

How do you store sourdough croutons?

Store in an air-tight container for up to a week. A glass jar or zip-lock bag works well. You can also freeze them for up to two months.
