Every time we go to the grocery store my kids beg me for some kind of treat. Since they know I won’t buy them cookies or ice cream they usually settle for fruit leather, organic chocolate bars, or their all time favorite healthy snack, Larabars.
I love Larabars because they contain so few ingredients. They are made with all real food, natural ingredients. But, they are quite expensive. They are great on the go, but when we can make them ourselves, we do.
We order our cashews from Country Life Natural Foods, a co-op based in Michigan. If you can’t find a good price on the nuts they may be almost as expensive to make, when you break the cost down.
The Larabars in the store do not contain coconut oil, but I find the homemade bars stick together better when I add it.
For this recipe you will need:
2 cups dates
2 cups raw cashews
1/4 cup cocoa powder
1/4 teaspoon salt
1/4 cup coconut oil
Combine all the ingredients in a food processor and pulse until combined.
Press in a 9X13 pan and refrigerate. After they harden a bit, cut them into bars and serve.
