Everyone in my family loves chocolate. I think most normal people buy a container of cocoa powder once a year. I buy two or three at a time so I don’t risk developing a sweet tooth and having no chocolate to fill the void.
I’m the one that buys those dark chocolate bars that have a 90% cocoa content, in case you were wondering who those were made for.
Because of our obsession I have come up with several chocolate recipes to keep my family satisfied, while still serving up something healthy.
Because we never have enough cream to make it between our weekly milk pick-ups (even though we buy 4 gallons every week!) I use coconut cream and coconut milk to make a lot of our sweet treats. I am simply unwilling to use anything but my beloved, heavy, just skimmed off the top, raw, organic, fresh, luscious, I could go on and on..cream on anything but my coffee. Any other will not suffice.
For this recipe you will need:
1 can coconut cream
3 large egg whites (pastured and from a farmer you trust, since they will be raw)
1 heaping tablespoon cocoa powder
2 tablespoons raw honey
1/2 teaspoon vanilla
Separate egg whites and place into large bowl. (Make sure not to get even a tiny drop of yolk in or they will not fluff up.)
Beat on high speed until soft peaks form.
Beat coconut cream on high for about 30 seconds until smooth and creamy.
Add in the rest of the ingredients and beat on low just long enough to combine.
I had a few little hands that wanted to help pour in the honey.
Put it in a pretty bowl and sprinkle on a little cocoa for a garnish and Enjoy!
